The wonderful man I'm married to - Mr Tea of course! - is not much of a cook. He is though, a superb eater and the times he tells me he loves the most is when I am in the kitchen. He tries all my cooking and tells me it's good even when it's not; which is sometimes not so helpful, but sweet all the same.
The one thing Mr Tea does excel at in the kitchen is sandwiches (and doing the dishes). His favourite sandwich is The Club. Whenever we stay at a hotel, the first thing he does is order one from room service - even if it's the middle of the night -and the rest of our stay is judged on the calibre of the establishment's Club.
This is Mr Tea's Club...it serves 1.
Ingredients
3 slices of fresh bread, lightly toasted
1/2 avocado
baby cos lettuce
tomato
2 rashers bacon, grilled to your liking
leftover roast chicken
1 slice Jarlsberg cheese (or any other cheese slice you have)
mayonnaise
salt and pepper
Spread 1 piece of bread with mayonnaise on one side only. Place a slice of cheese on the mayo, and arrange the bacon, lettuce and tomato on top.
Spread another piece of bread with mayo on both sides, place on top of the first layer. Arrange the chicken, lettuce and tomato on top of this second piece of bread. Season with salt and pepper.
Spread the remaining piece of bread with avocado on one side and place it avocado side down on top of the chicken layer.
Secure this monster with a toothpick or two, and cut it in half.
