Perhaps you're roasting a chicken this weekend? If you're not, never mind you can pop this quick little recipe in your pocket until you do. It's perfect for chicken leftovers and a nice way to gussy up your sandwiches for work or school.
Place the chicken pieces, a large spring onion, some flat leaf parsley and some good mayo in the food processor. Season with salt and pepper and then whizz all the ingredients together. Smear the paste onto some fresh crusty bread or a bagel, top with shredded lettuce and devour.
