Niçoise Salad - 2 - $

A wise man once said, 'You don't win friends with salad.'
An even wiser woman (that's me), says 'We'll see about that!'

This salad is a definite winner. The amounts below will feed two people as a main, or a at least four people as a side.



In
gredients

6-8 Cocktail potatoes, scrubbed and halved
2 Eggs
185gm can of tuna in olive oil
Lettuce of your choice, washed and roughly chopped
8 Cherry tomatoes halved
1/2 Red onion, finely sliced
1 Lebanese cucumber, sliced into rounds and halved
10-12 Green beans, ends removed and halved
12 Black olives
Mayonnaise (I like the Japanese Kewpie mayo)
Red wine or Balsamic vinegar

Boil the eggs to your liking, not too soft in the middle though.
In a separate pot boil the potatoes in salted water for about 5-7 minutes, piercing with a fork to test they are cooked. Before taking the potatoes off the heat, drop the beans in to blanch for 30 seconds and then drain all the veg at once.
In the meantime, place all the salad veg in a large bowl. Drain half the oil from the tuna (the rest will be part of the dressing) and then add to the bowl, breaking it into small pieces with a fork.
Add all the cooked ingredients and olives, and then a generous splash of vinegar and a good couple of tablespoons of mayonnaise. Mix gently to combine all ingredients and serve while the potatoes and eggs are still warm.
